Spock observes the eating of the olive, and then he looks at his own. He pulls the pick out of the glass and ensures the olive has dripped dry before he carefully puts it into his mouth and eats it. As alcohol tends to be bitter, it is a taste Spock can pick up fairly well. It is not entirely unpleasant in combination with the olive.
